Thin, persistent bubbles; light straw yellow; typical, fragrant bouquet with floral, fruity and herbal notes; sweet, aromatic and crisp, with balanced acidity.

- Soft-pressed and cold-settled, must filtered and stored at 0C; partial fermentation of sugars carried out by the Martinotti-Charmat method after adding selected yeasts, then isobaric bottling. Bottle overpressure never exceeds 2 bar.
