Montaribaldi Pajorè

A single-MGA Barbaresco DOCG from the 1.05 ha Pajorè cru, planted in 2010, distinguished by an early-ripening microclimate bordering the estate's own Montaribaldi vineyard.

Tasting notes

Elegant with slightly more pronounced, sophisticated tannins than the neighbouring Montaribaldi MGA, a result of the vineyard's own microclimate and clonal selection; great structure, powerful yet balanced.

Vinification
Fermented at least a week at 28-32C, then kept on fine lees at 20-22C for at least two months to complete malolactic fermentation. Aged about 30 months, part in traditional Slavonian oak casks (2,000-3,000 L), bottled more than two years after harvest and rested at least 6 months before release.
