Terre dei Santi Castelnovello

The estate's novello, released in early November and best drunk by the following spring.

Tasting notes

Ruby red with violet reflections. Floral and above all fruity, with fresh red fruit. Low in tannin and alcohol, soft, fresh and light.

Pairs well with

Chestnuts, grilled meats, cooked salumi and rich soups such as bagna caoda.

Vinification
Hand-picked in small crates. Whole bunches go through carbonic maceration for at least 12 days at about 28 C, then gentle pressing and temperature-controlled fermentation. No maturation.

16 to 18 C
