Soil
Tertiary-age, calcareous soils with an alkaline reaction, poor in organic substances and dry in summer; the vineyards belong to a small area of only 2-3 hectares with very low yields (about 1.5 kg per vine).
Vinification
Slightly overripe grapes vinified traditionally, with maceration on skins for about 15 days at 28-30 degrees C. Malolactic fermentation follows immediately, and the wine ages in barriques for 15 months, plus a further six months in the bottle. Released only in the best vintages.
