Tasting notes
Good pulp, ruby red, turning elegant garnet with age. Wide-ranging scent of ripe fruit, cocoa, spices, vanilla and toast. Dry, robust, rich and persistent.
Pairs well with
Red meat, roasts, game and mature cheeses; a meditation wine.

- End of September to beginning of October, traditional harvest with strict manual selection of grapes

- Vines over 60 years old
- Vinification
- Maceration and fermentation in stainless steel tanks at controlled temperature for about 25 days. Malolactic fermentation can take place. Aged 18 months in French oak, new barriques only, with a selection of the best barriques. Alcohol approx. 15% vol.
- Serving temperature
- Serve in a large glass (Balon) at about 20°C
- Storage
- Keep lying down in a dark place at a constant 12 to 14°C. Excellent ageing potential.
