A rosé Alta Langa spumante, about 3,000 bottles a year, named for the family patriarch Camillo.
Tasting notes
Delicate, clear onion-skin color with orange highlights. Soft, fine, persistent perlage. Dry and fruity with good structure, full and intense, with a long finish of dried fruit, plums and blackberries.
Pairs well with
Aperitifs, fish dishes, pasta, soup or white meat.

- End of August to beginning of September, traditional harvest with manual selection of grapes
- Vinification
- Soft pressing, then about 24 hours of cold decantation before the must is racked and fermented. Aged in oak and acacia; bottled after about a year with crown caps, and second fermentation in the cellar at 14 to 18°C. At least 30 months on the yeasts before disgorgement. Alcohol approx. 14% vol.
- Serving temperature
- Serve in a medium glass at about 4 to 6°C
- Storage
- Keep in a dark place at about 10 to 12°C. Good ageing potential.
