A Metodo Classico sparkling, about 8,000 bottles a year, named for the family's great-grandmother Palmina.
Tasting notes
Fragrance of fresh fruit, pineapple and white peach. Rich, persistent and slightly bitter in the mouth, with a citrus recall.
Pairs well with
Aperitifs, fish dishes, pasta, soups, white meats, or as a cocktail base.

- End of August to beginning of September, traditional harvest with selection of grapes
- Vinification
- Grapes are crushed and pressed immediately. First fermentation in stainless steel tanks at controlled temperature; second fermentation in the bottle. About a year on the yeasts. Alcohol approx. 13% vol.
- Serving temperature
- Serve in a flute at about 4 to 6°C
- Storage
- Keep in a dark place at 8 to 10°C. Best not to age beyond three years.
