Erbaluce dried for 5 months and aged 6 years in oak, 14 to 14.5% alcohol, 0.375 L bottle, about 2,000 bottles a year.

Tasting notes

Clear amber yellow with coppery shades. Very broad: dried plum, ripe apricot, a bitter note, chestnut honey to peach blossom, vanilla, toasted almond, dried Mediterranean herbs and balsamic notes. Sweet, rich, with bitter touches, slightly savoury.

Pairs well with

Dry pastries, blue cheeses and markedly savoury dishes; meditation wine

Pressing of the dried grapes (5 months of drying), static settling of the must and start of alcoholic fermentation. 6 years in oak barrels and 6 months in bottle (shop page: over 10 years of ageing). Light filtration, natural cork. Total acidity 5.5 g/L, pH 3.5.
