The estate's only white aged in wood: small first-passage oak barrels, 13 to 13.5% alcohol, about 2,000 bottles a year.

Tasting notes

Bright golden yellow. Intense and complex, with ripe citrus, hazelnut and dried fruit. A balanced mosaic of varietal freshness with the warm, soft notes of white spices and light toasted wood; the small oak barrels give a gentle, elegant tannin.

Pairs well with

Cheeses, mushrooms, white meats and cured meats; complex, intense dishes such as risotto with Moncenisio blue cheese

Vinification
Quick pressing with a light maceration in the press and a careful selection of the musts, with alcoholic fermentation at controlled temperature. 15 months in total: 12 in oak barrels with frequent stirring and 3 in bottle. Bottle flushed with inert gas, cork closure. Total acidity 6 g/L, pH 3.4.
