Cantina della Serra Serra Rosè

Brut rosé sparkling wine made by the Martinotti method with 6 months in autoclave, 12% alcohol, about 18,000 bottles a year.

Tasting notes

Bright coral pink. Fresh, with young fruit, raspberry and pink grapefruit, pear, strawberry, bread crust and yellow peach, and a hint of medicinal herbs. Fresh on the palate, medium intensity, good persistence and savouriness.

Pairs well with

Savoury dishes with bitter touches: pizza with capers or fresh goat cheese aged with Provencal herbs; also as an aperitif or with a board of local cured meats and cheeses

Vinification
Quick pressing of the grapes and a careful selection of the musts, with alcoholic fermentation started at controlled temperature. Autoclave ageing, with 2 months on the lees and frequent stirring in the tech sheet (6 months in autoclave on the shop page). Technical cork. Brut; total acidity 6.5 g/L, pH 3.3.
