Enrico Serafino Zero140 de Saignée

The saignée-method Rosé counterpart to Zero 140, aged almost 12 years on the lees, which the estate says tames the power of Pinot Noir into a long, complex expression of the Alta Langa terroir.

Tasting notes

Pale rosé with onion-skin nuances and a fine, persistent perlage, a complex, broad nose where bread crust and candied fruit alternate with lime honey and small red fruit still perceptible after the long ageing on the lees, and a palate of great freshness and acid tension over mineral and toasted hazelnut notes, with striking length.

Pairs well with

Good as an aperitif, with fish and shellfish dishes, oysters and caviar.

Guyot-trained vines 25 to 30 years old at 450 to 550 metres above sea level, 100% hand-harvested, farmed with sustainable viticulture.
Vinification
Hand-sorted bunches are chilled with dry ice, destemmed and crushed, then the must rests 2 to 4 hours in the press under nitrogen for colour extraction by the saignée method before gentle pressing at up to 45% free-run yield. It ferments in temperature-controlled steel tanks and rests 6 months on the lees with bâtonnage, then undergoes the classic method second fermentation in bottle, aged on the lees for at least 140 months with no dosage.
