Enrico Serafino Picotener

Picotener is an old, nearly forgotten Nebbiolo subvariety, prized for its polyphenols and spice, that the estate has a dedicated project to revive on its Canale vineyards.

Tasting notes

Bright red with violet nuances, an intense, elegant and complex nose of rose and violet florals with cherry and greengage fruit and fine spice notes, and a fine, velvety, fresh, medium-to-full palate with intriguing tannins and a long, persistent mineral finish.

Pairs well with

Pasta, soups, red meats, seasonal dishes and medium to well-aged cheeses.

Vineyard planting
Guyot-trained vines 10 to 12 years old, yields around 6,500 kg/ha, 100% hand-harvested.
Vinification
Hand-sorted bunches are chilled with dry ice to limit oxidation and sulphite use, then destemmed and hand-sorted again, with part going to whole-berry fermentation and part to gentle crushing, and no use of screw augers throughout. Fermentation takes place in temperature-controlled steel tanks with a medium-length, délestage-aided maceration partly on submerged cap for 18 days, followed by 12 months' ageing in medium oak barrels of 2,500 to 4,000 litres.
