Enrico Serafino Maneo

Maneo, Latin for "I remain", is named for the long ageing this Gavi undergoes, released only five years after harvest so it can fully express its site.

Tasting notes

Straw yellow with typical greenish reflections, a broad, complex nose of wildflowers, mint, lavender and sage alongside mineral flint notes and fruity hints of bergamot and white peach, and a fresh, mineral, very long palate with a solid body backed by acidity and full flavour, with faintly hydrocarbon nose-palate correspondence.

Pairs well with

Fish, shellfish and sushi, also with risottos and delicate first courses; excellent as an aperitif.

Vineyard planting
Guyot-trained vines around 35 years old, yields around 8,500 kg/ha, 100% hand-harvested into crates, farmed with sustainable viticulture.
Vinification
Hand-sorted bunches are chilled with dry ice to limit oxidation and sulphite use, then gently pressed, with part crushed and cold-macerated overnight in the press, with no use of screw augers. The must, obtained by soft pressing of whole and crushed bunches under nitrogen, ferments in temperature-controlled steel tanks, then ages on its own lees in steel and afterwards in bottle, not released before the fifth year after harvest.
