Enrico Serafino Dosso

Named after the Piemontese dialect meaning of Dolcetto, "sweet in its acidity" compared with Barbera, Dosso is the estate's everyday red, aged briefly in bottle rather than wood.

Tasting notes

Deep ruby red, a fruity, vinous, delicious nose of small red fruit, and a soft, fine, medium-bodied palate with the pleasant flavour typical of Dolcetto.

Pairs well with

Antipasti, pasta, risotto, chicken, cheese and cured meats.

Vineyard planting
Guyot-trained vines 15 to 25 years old, yields around 9,000 kg/ha, 100% hand-harvested, farmed with sustainable viticulture.
Vinification
Hand-sorted bunches are chilled with dry ice to limit oxidation and sulphite use, then destemmed, hand-sorted again and gently crushed with no use of screw augers. The must ferments in temperature-controlled steel tanks with a short, 10-day maceration using délestage, and the wine is aged only in bottle for about 3 months before release.
