Enrico Serafino Oudeis

Oudeis takes its name from the Greek for "no one", reflecting the estate's belief that only the terroir, not the winemaker, is responsible for a wine's complexity; this Brut blends mostly Pinot Noir with a smaller share of Chardonnay.

Tasting notes

Straw yellow with golden reflections and a fine, persistent perlage, a complex, attractive, delicate nose of yellow flowers, white-fleshed fruit, bread crust and mineral notes, and a complex, many-sided, vertical, dry palate with citrus notes, elegance and a long mineral aftertaste.

Pairs well with

Good as an aperitif, with fish and shellfish dishes, and throughout a meal.

Harvest
The harvest began on August 17th with Alta Langa. Barbera and Nebbiolo experienced a slowdown in ripening which then resumed in the second half of September. Nebbiolo, in particular, was harvested in optimal conditions. 2020 will be remembered as an excellent vintage, highlighted by intense and very elegant aromas and the great balance of its wines.
Vineyard planting
Guyot-trained vines 15 to 25 years old at 300 to 550 metres above sea level, 100% hand-harvested, farmed with sustainable viticulture.
Vinification
Hand-sorted bunches are pressed in an inert nitrogen atmosphere for a free-run yield of about 55%; the must ferments in temperature-controlled steel tanks and rests 6 months on the lees with bâtonnage. The classic method second fermentation happens in bottle, aged on the lees for at least 36 months; the dosage liqueur added after disgorgement follows the estate's own recipe of reserve wines and sugar (6 g/L), with no distillate.
