Made to preserve the freshness and fragrance of vineyards in the heart of the Gavi commune, Grifo del Quartaro benefits, the estate says, from the area's marked day-night temperature swings, which lift its floral aromatics.

Tasting notes

Straw yellow with typical greenish reflections, a broad, delicious nose of wildflowers, almond and white and yellow fruit such as apple, pear and white plum with gooseberry, and a fresh, dry, intense, harmonious and pleasantly fruity palate, soft with good body, well-balanced acidity and a pleasantly long finish.

Pairs well with

Antipasti, shellfish and seafood dishes; also excellent as an aperitif and with sushi.

Guyot-trained vines 10 to 25 years old, yields around 9,500 kg/ha, 100% hand-harvested, farmed with sustainable viticulture.
Vinification
Hand-sorted bunches are chilled with dry ice to limit oxidation and sulphite use, then gently pressed with no use of screw augers. The must, obtained by soft pressing of whole bunches under nitrogen, is chilled before fermenting in temperature-controlled steel tanks, then ages only in bottle for about 3 months before release.
