Enrico Serafino Zero de Saignée

A rosé made by the saignée method from 100% Pinot Noir, Zero de Saignée carries the same house style as the estate's other Alta Langa Riserva pas dosé wines, with the variety's fruit and structure drawn out by the brief skin contact.

Tasting notes

Pale rosé with onion-skin nuances and a fine, long-lasting perlage, a complex, deep nose of small red fruit such as raspberry, strawberry, blueberry and redcurrant that reveals its Pinot Noir saignée origin, fading into bread crust, white fruit and lime blossom, and a palate built on great freshness and acid tension with a long, mineral, saline finish.

Pairs well with

Good as an aperitif, with fish and shellfish dishes, and excellent with prosciutto and salmon dishes.

Guyot-trained vines 20 to 25 years old at 450 to 550 metres above sea level, 100% hand-harvested, farmed with sustainable viticulture.
Vinification
Hand-sorted bunches are chilled with dry ice, destemmed and crushed, then the must rests 2 to 4 hours in the press under nitrogen for colour extraction by the saignée method before gentle pressing at up to 45% free-run yield. It ferments in temperature-controlled steel tanks and rests 6 months on the lees with bâtonnage, then undergoes the classic method second fermentation in bottle, aged on the lees for at least 60 months and released with no dosage.
