The Alta Langa Extra Brut from Collezione '56 grew out of an ambitious sparkling wine project at Cooperativa Vallebelbo. It is a metodo classico shaped by years of agronomic and winemaking experience, made in a limited run with close stylistic care for its layered sensory nuances.

Tasting notes

Fine, silky mousse, intense straw yellow with faint golden hues. The nose shows freshly baked bread and fresh white flowers. The palate is complex and enveloping, with striking freshness and length.

Vinification
Hand harvested grapes in small crates are pressed whole, gently. The must ferments at controlled temperature before the cuvee is assembled and tirage begins for the second fermentation in bottle. Aged at least 30 months sur lie, followed by remuage, degorgement and further ageing in glass.
