A tribute to the writer Cesare Pavese, who dedicated many enduring works to his home town of Santo Stefano Belbo and its people, this metodo classico comes from high-altitude vineyards and gives a fresh sensory profile for Piemonte's benchmark sparkling wine style.
Tasting notes
Fine, silky mousse, intense straw yellow with light golden hues. The nose shows freshly baked bread, hazelnut and delicate background wisteria. Persistent, creamy and vibrant on the palate.

- Vinification
- Hand-harvested grapes in small crates are gently pressed, extracting only the heart of the must. Fermentation in temperature-controlled steel before the final blend is assembled and tirage begins for the second fermentation in bottle. Aged over 30 months sur lie before degorgement.
