Calcareous clay, rich in white rock and sand; 0.48 ha.
Vineyard planting
Planted in the 1960s and 70s, with wood from ancient massal selections.
Vinification
Each vineyard is picked once the grapes reach full physiological maturity, judged by the ripeness of the pips; harvest is by hand into small crates, and the fruit is given two manual selections before vinification. Fermentation runs about ten days in wooden vats with a pied de cuve of indigenous yeasts, followed by an ancient submerged-cap maceration of about 60 to 70 days, then roughly five years of ageing in neutral oak and concrete vats.
