A single-vintage Barolo (2007) made in a very limited edition from a year-long collaboration with a local winemaker in the historic Le Coste mention.

Vinification
Each vineyard is picked once the grapes reach full physiological maturity, judged by the ripeness of the pips; harvest is by hand into small crates, and the fruit is given two manual selections before vinification. Fermentation runs about ten days in wooden vats with a pied de cuve of indigenous yeasts, followed by an ancient submerged-cap maceration of about 60 to 70 days, then roughly five years of ageing in neutral oak and concrete vats.
