Vineyard planting
Young vines, up to 20 to 25 years old, exclusively of massal origin, propagated from wood taken when pruning the same vineyard.
Vinification
Fermentation takes place exclusively in wooden vats with a pied de cuve of indigenous yeasts and lasts about ten days, followed by an ancient submerged-cap maceration of at least two months. The wine ages in a neutral oak barrel and concrete tanks for about five years.
