Soil
Marine sedimentary soils of the Helvetian era (Tertiary): alternating strata of white limestone, grey marl, blue marl and sand, with a high mineral and iron content.
Exposure
South-east, on the Serralunga and Perno slope; 7 ha under vine, 4 ha of woodland, protected uphill by the Rocche di Castiglione.
Vineyard planting
Vines over 25 years old, exclusively of massal origin, propagated from wood taken when pruning the old Pira vines; oldest plantation from 1937.
Vinification
Each vineyard is picked once the grapes reach full physiological maturity, judged by the ripeness of the pips; harvest is by hand into small crates, and the fruit is given two manual selections before vinification. Fermentation runs about ten days in wooden vats with a pied de cuve of indigenous yeasts, followed by an ancient submerged-cap maceration of about 60 to 70 days, then roughly five years of ageing in neutral oak and concrete vats.
