Soil
Calcareous clay rich in active limestone.
Vineyard planting
Family-cultivated since 2014; part of the plot planted in the 1950s and part in the 1980s-90s, with old Nebbiolo vines about 50 years old, of massal origin.
Vinification
Each vineyard is picked once the grapes reach full physiological maturity, judged by the ripeness of the pips; harvest is by hand into small crates, and the fruit is given two manual selections before vinification. Fermentation runs about ten days in wooden vats with a pied de cuve of indigenous yeasts, followed by an ancient submerged-cap maceration of about 60 to 70 days, then roughly five years of ageing in neutral oak and concrete vats.
