Tasting notes
Appearance: straw yellow with golden highlights and an extremely persistent mousse. Nose: grape, white peach, sage, mountain hay. Palate: flavourful and lively, with sweetness and acidity in balance
Pairs well with
Hazelnut cake, amaretti and dry pastries, and spicy or ethnic dishes such as chicken curry, Chinese dumplings, sushi and hot pot

- Vinification
- Soft pressing, must kept in stainless steel tanks at controlled temperature, partial alcoholic fermentation started as needed, no malolactic fermentation. Bottled in December. About 3,000 bottles a year, 5% alcohol.
