Barbaresco from the San Giuliano MGA, the vineyard around the ciabot that Ornella Pelissero brought back as a named wine from the 2007 harvest.

Tasting notes

Appearance: red garnet with orange hues. Nose: rose, violet, red and black currant, black pepper, cocoa, sweet tobacco, leather. Palate: tannic as a Barbaresco should be, with a persistent, harmonious finish

Pairs well with

Charcuterie board, lasagna Bolognese, meat ravioli, mushroom tagliatelle, truffle risotto, brisket and beef ribs, beef stew, beef Wellington

Vinification
Soft pressing, temperature-controlled fermentation for 10 to 15 days, malolactic fermentation. Aged 2 years in 25 to 30 hl French oak casks and 6 months in bottle. Bottled in August. About 8,000 bottles a year, 14% alcohol.
