Pasquale Pelissero Ciabot Riserva

A small-lot Barbaresco Riserva from 0.3 ha of the San Giuliano vineyard, aged in new barriques and named for the ciabot among the vines.

Tasting notes

Appearance: red garnet with orange hues. Nose: cherry, blueberry and blackberry, licorice, tobacco, spices. Palate: complex, full-bodied and persistent, with perfumes that promise a harmonious sip; it can be drunk with food or on its own

Pairs well with

Parmigiano aged 36 months, mushroom dishes, truffle tagliatelle, brisket and beef ribs, beef stew, roast turkey

Vinification
Soft pressing, temperature-controlled fermentation for 10 to 15 days, malolactic fermentation. Aged 3 years in new oak barriques and 24 months in bottle. Bottled in August. About 1,000 bottles a year, 14.5% alcohol.
