Tasting notes

Appearance: red garnet with orange hues. Nose: rose, violet, lighter notes of black pepper. Palate: savoury, spicy, full-bodied and velvety

Vinification
Soft pressing, temperature-controlled fermentation for 10 to 15 days, malolactic fermentation. Aged 2 years in 25 to 30 hl French oak casks and 6 months in bottle. Bottled in August. About 4,000 bottles a year, 14% alcohol.
