A classic-method Piemonte spumante from Neive and Castiglione Tinella vineyards, made with 24 months on the lees.
Tasting notes
Appearance: straw with gold hues and a fine perlage. Nose: honeysuckle, lime, yellow apple, white peach, blueberry, blackberry, toasted bread, marzipan. Palate: creamy, elegant, bright, mineral and persistent
Pairs well with
Aperitif, fish or seafood appetisers, shrimp bisque, vegetable tempura, fried chicken, fried fish, blue and triple-cream cheeses, Alba white truffle dishes

- Soft pressing of whole clusters, temperature-controlled fermentation, second fermentation in bottle (metodo classico) for 24 months. Aged 6 months in bottle. Bottled in July. About 3,000 bottles a year, 13% alcohol.
