Cantina Clavesana Ravera

A single-vineyard Barolo DOCG from a 0.37-hectare plot in the Ravera cru of Novello, aged 25 months in Slavonian oak tonneaux.

Tasting notes

Fresh, well-balanced acidity with small red fruit, balsamic notes and sweet spice. Firm, velvety tannins give elegance and a long finish.

Pairs well with

Structured, refined dishes; truffle-based dishes such as tajarin, or braised meat; also enjoyable on its own as a meditation wine.

A single 0.37-hectare vineyard in Novello at about 400-420 m altitude, on a hillside facing east and south-east; planted at a density of about 4,400 vines/ha, thinned in August to control yield (about 2 kg of grapes per vine).

Vinification
Destemmed and crushed, macerated about 14 days in a small vitrified cement vessel; after malolactic fermentation the wine is aged 25 months in four 500-litre Slavonian oak tonneaux before bottling the following summer.
