Cantina Clavesana Piemonte Spumante

A Metodo Classico Piemonte DOC Spumante from Chardonnay and Pinot Nero, aged on the lees for about 20 months.

Tasting notes

Pale yellow with greenish hues, a very fine, persistent perlage and an elegant mousse. Rich, yeasty nose with notes of bread crust. Full, balanced on the palate with a pleasantly acidic, persistent finish.

Pairs well with

Good as an aperitif or with seafood starters, delicate first courses and vegetable bakes; also suited to fresh cheeses and fried fish.

Guyot-trained, vines 4-5 years old, density 4,000 vines/ha, yield up to 11 t/ha.
Vinification
Metodo Classico: selected grapes pressed and vinified in steel vats at 17°C, matured on the lees, then re-fermented in bottle at 15°C for about 50 days the following spring. Bottles rest on lees for about 20 months, then riddled (remuage) before disgorgement and dosage.
