Rosato from Barbera and Pinot Noir, vinified white with about 2 hours on the skins. 12% vol.

Tasting notes

Very soft thanks to the short skin contact and few tannins. Pale rose colour, fruity nose with notes of wisteria, blackcurrant and rose. Freshness, good acidity and savouriness on the palate.

Pairs well with

Fish, fried small fish and sushi; the house prefers paella valenciana. Unusual pairing: buffalo ricotta or mushroom pizza with Grana Padano.

Vinification
Red grapes vinified white, with a short skin maceration of usually 2 hours in the press, limited according to the colour wanted. Fermentation in stainless steel tanks, then a short rest in bottle.
