Cantina Sant'Evasio Tramonto

A Cabernet Sauvignon grown on the estate's San Nicolao hill and barrique-aged, named for the memory of a fiery summer sunset.

Tasting notes

Dark ruby red with garnet reflections. Vinous, intense, pleasant, distinctive bouquet. Full-bodied, fine, soft, herbaceous palate.

Pairs well with

Red meat second courses, stews, game and well-aged cheeses and polenta.

Vinification
Destemmed and crushed, fermented in temperature-controlled steel tanks, racked, with malolactic fermentation and natural cold stabilisation. Aged over a year in oak barriques (225-litre casks), bottled the following summer and rested further months at the estate.

18-20°C; uncork an hour ahead, decant if possible, serve in large balloon glasses
