Cantina Sant'Evasio Barolo

Sant'Evasio's Barolo, made from Nebbiolo grown in La Morra on calcareous soil and aged three years in oak followed by six months in bottle.

Tasting notes

Deep ruby red leaning to brick red. Intense bouquet, opening on violet and dried dog-rose and evolving toward tar, fading into a very distinctive ethereal bouquet. The palate confirms the aromas: harmonious, full and very persistent.

Pairs well with

Red meats, stews, game and strongly flavoured cheeses, with polenta.

Vinification
The best grapes are fermented in small temperature-controlled steel vessels for a high-quality result. Aged three years in oak casks, then a further six months in bottle before release.
Serving temperature
18-20°C; uncork at least an hour before serving and decant into large balloon glasses
Storage
10 years and more. Matured in small oak barrels (barriques) and large barrels for 36 months, followed by 1 year of bottle aging.
