Natural ancestral-method sparkler from Arneis and Nebbiolo, bottled by hand with no added sulphites. Part of the family's Radici e Filari line.
Tasting notes
Delicate mousse with intense primary and secondary aromas and a bread-crust scent from the yeast deposit. Not disgorged: it can be drunk cloudy or clear, depending on how slowly it is poured.

- Native Arneis and Nebbiolo; copper and sulphur for vine protection, manure fertiliser, certified organic with biodynamic practices
- Vinification
- Ancestral method. Light pressing to draw out the native yeasts, fermentation in steel, a few months of settling, then hand bottling under crown cap at the first quarter of the October moon with fresh must added, so fermentation restarts in the bottle. Unfiltered, unfined, no sulphites added at bottling. Alcohol 11.5%, residual sugar zero.
