Deep ruby. Fine, aristocratic nose with complex aromas of small fruits, liquorice, violet and vanilla.

A wine for contemplation; red meats, braised and boiled meats, aged cheeses and game, and dark chocolate.

Vinification
Nine days of fermentation with manual punch-downs and délestage. Part goes to large wooden casks, part to barriques and part to steel for malolactic fermentation. Ages 18 months in oak, rests three months, then six months in bottle. Alcohol 14 to 14.5%, total acidity 5.0 to 5.5 g/l. Ageing potential over 10 years.
