Tasting notes

Deep ruby. Winey nose with clear notes of undergrowth, black cherry, raspberry and plum. Good flesh and softness on the palate, with red berries and liquorice.

Pairs well with

Red and grilled meats, cheeses, first courses and savoury pies.

Vinification
Nine days of fermentation with manual punch-downs and délestage. Ages 12 months, 90% in steel and 10% in wood, where malolactic fermentation takes place, then rests three months and spends at least three months in bottle. Alcohol 13.5 to 14%, total acidity 5.5 to 6.0 g/l. Ageing potential over 8 years.
