Rabino Vino Chinato

A Nebbiolo-based aromatised wine infused with herbs and calisaya cinchona bark, 16.5% alcohol with 30 g/l residual sugar. About 1,000 bottles are made; ageing potential 6 years.

Vinification
Grapes are destemmed and crushed, then ferment in steel tanks at 28 °C for about 20 days, with délestage to extract colour without losing the typical aroma; malolactic fermentation follows. The finished wine goes to a distillery, where herbs selected by the oenologist and calisaya cinchona bark are infused.
