Rabino Roero

Roero DOCG from 100% Nebbiolo planted in 1979 on sandy-clay soil with south-west exposure, aged 24 months in large French oak barrels. 13% alcohol, about 2,000 bottles; ageing potential 10 years.

Tasting notes

Intense, brilliant ruby. Raspberries and wild blackberries, spices such as cinnamon and vanilla, and fine wood on the nose. Balanced alcohol and tannin, with sweet, noble tannins and a long, aromatic finish.

Pairs well with

Important red meats such as shank and braised beef, and all game.

Vinification
Grapes ferment for about 8 days in steel at 27 °C (25 days on the skins in total), with pumping over and délestage; malolactic fermentation follows. The wine then ages for 24 months in 10-year-old large barrels of medium-toast French Allier oak, and rests at least 1 year in bottle.
