Langhe Dolcetto DOC from 100% Dolcetto planted in 1994, 12.5% alcohol. About 2,500 bottles are made; ageing potential 2 years.

Tasting notes

Ruby red with violet reflections. Aromas of red fruit such as plum, berries and strawberry. Balanced on the palate, not tannic, with only slight acidity. An everyday wine to drink with a meal.

Pairs well with

Traditional Piedmontese dishes: meat starters such as vitello tonnato and knife-cut raw beef, and agnolotti del plin.

Vinification
Destemmed and crushed, then ferments in steel tanks at up to 28 °C (spontaneous temperature) for about 7 days, with pumping over and punching down; malolactic fermentation follows. At least 4 months in bottle.
