Rabino Cavajè

A Brut sparkling wine from 100% Arneis, made in autoclave; the estate has made an Arneis spumante since 1979. 12.5% alcohol, about 6,000 bottles.

Tasting notes

Pale straw yellow with bright green reflections. Pleasant, inviting nose with the fruity, floral character of Arneis. Fine and elegant on the palate, with a fine, lasting perlage.

Pairs well with

Aperitif, cocktails based on sparkling wine, or at the end of a meal.

Vinification
Grapes are destemmed and pressed, then ferment slowly in steel at 12 to 13 °C. Batonnage over the winter. In February the wine goes to autoclave for the second fermentation at 10 to 11 °C, which builds a fine, persistent perlage. Fermentation ends in late June, then the wine is bottled and rested in the cellar for at least 2 to 3 months.
