“Ritorno in” Alta Langa

A vintage Traditional Method Alta Langa Brut named for the Piazzo family's origins in San Bovo di Castino, in the Alta Langa, where Armando's great-grandfather Paolo Piazzo lived and worked as a woodcutter.
Tasting notes
Colour: straw yellow. Nose: complex and elegant, with notes of white-fleshed fruit, dried fruit, yeast and bread crusts. Taste: dry, full-bodied and persistent, with a pleasant acidic freshness and a thick, creamy foam.
Pairs well with
Charcuterie and cheese board, shellfish, fish; also good with roast chicken, spicy fusion cuisine and grilled meat

- Vinification
- Pressing of the grapes, fermentation in temperature-controlled stainless steel tanks and ageing for 7 to 8 months on lees. Bottling and secondary fermentation follow the traditional method in the spring after harvest; the bottles rest horizontally for at least 30 months, then about a month more in riddling racks. After disgorgement the bottle is topped up with the same sparkling wine and a small dosage of sugar.
