Sparkling

A Traditional Method sparkling wine made mostly from Nebbiolo with a small share of Chardonnay from cooler vintages. Its name, MasSim, combines Marco and Simone, the sons of Marina and Franco Piazzo.
Tasting notes
Colour: straw yellow with slight golden reflections. Nose: elegant and fruity, revealing more complex notes of yeast, bread crust and dried fruit. Taste: dry, full-bodied, structured and persistent, with a thick, persistent foam and a dominant Nebbiolo character.
Pairs well with
Charcuterie and cheese board, fish; also good with poke, roast chicken and spicy fusion cuisine

- Vinification
- Pressing of the grapes, fermentation in temperature-controlled stainless steel tanks and ageing for 7 to 8 months on lees. Bottling and secondary fermentation follow the traditional method in the spring after harvest; the bottles rest horizontally for at least 30 months, then about a month more in riddling racks. It is disgorged and topped up with the same sparkling wine, without any addition (Dosaggio Zero / Pas Dosé).
