Valentìne is Valentina Grasso's personal project, born from time spent working the 2013 harvest at Domaine de Montille in Meursault, and made from the estate's oldest Chardonnay vines using Burgundian technique.
Tasting notes
A fresh bouquet reminiscent of wet stone, lemon oil and honey, with a saline, savoury finish, in the style of Saint-Aubin.
Pairs well with
Fine fish dishes, white meats, aged cheeses.

- Vinification
- Grapes are pressed and the must decants overnight at room temperature. Fermentation and yeast metabolism begin during the soutirage into two 500-litre French oak barriques, with weekly batonnage. The wine is then moved to steel to rest before bottling without filtration.
