An elegant Metodo Classico sparkling wine of great freshness, combining the character of a Blanc de Noirs with immediacy and easy drinking.

Tasting notes

Pale straw-yellow wine with a fine and persistent mousse. Fruity aromas of russet apple and pear on the nose, enhanced by pastry notes. On the palate, vibrant acidity and a creamy mousse integrate with the structure of Nebbiolo, with a return of fruity aromas.

Pairs well with

Typical: a versatile wine for the whole meal except dessert. Top: Insalata russa. Unusual: fried crispy sage.

Vinification
Hand-harvested grapes in 18 kg crates are gently pressed; only the free-run juice and the first fraction of the pressed juice are used. The must is clarified by static settling for 48 hours, then fermented at a controlled temperature of 15-18 C. Secondary fermentation takes place in the bottle (Traditional Method) in the spring following the harvest, followed by 24 months of aging on the lees before disgorgement. Alcohol 12.5% vol, dosage 4 g/L (Extra Brut).
