Tasting notes
Floral notes of hawthorn, chamomile and sage on the nose. Refined and well balanced on the palate, with acidity and salinity in harmony.

Typical: aperitifs, fish dishes, vegetables. Top: farinata. Unusual: artichoke salad.

- 4,500 vines per hectare, yield about 10 t per hectare, guyot training, 220 m altitude
- Vinification
- Gentle pressing of the grapes in an inert environment. First fermentation at a controlled temperature of 15-16 C, followed by 6 months of aging on fine lees, then secondary fermentation in autoclave (Martinotti Method). After the second fermentation, a further 3 months of aging on fine lees before bottling. Alcohol 12.5% vol, dosage 6 g/L (Brut).
