La Chiara Spumante Metodo Classico

One of the estate's main products, an artisanal sparkling wine made scrupulously following the traditional Champenois method.

Tasting notes

Light straw yellow color with a fine, creamy mousse. The bouquet is delicate with pleasant notes of fresh hay and white flowers, lightly almond scented, with citrus and bread crust. The palate is soft, full, harmonious, with good, elegant structure.

Pairs well with

A very fragrant sparkling wine with pronounced freshness, it pairs with flavorful dishes and land and sea starters, and is excellent as an aperitif, with enough body to be enjoyed throughout a meal.

Guyot training, 4000 vines per hectare, average vine age 20 years.
Vinification
The grapes are carefully hand-harvested, generally in the first two weeks of September. The cuvee obtained undergoes alcoholic fermentation in temperature-controlled steel tanks, where it stays until the following spring. During tirage, yeasts and sugars are added to trigger the second fermentation, which takes place entirely in bottle. Disgorgement (a la glace) follows about 18 to 24 months of bottle aging, including about a month on the riddling racks with two daily remuage turns. Brut, residual sugar 0 to 6 g/l.
