- Guyot training, 4500 vines per hectare, average vine age 35 years.
- Vinification
- As with the Barbera, this wine, typical of Piemonte's farming tradition, is obtained through skin maceration, preceded by gentle crushing and destemming, with alternating pump-overs and delestage. Alcoholic fermentation is at 26C in temperature-controlled stainless steel tanks. Malolactic fermentation is then triggered at controlled temperature with the help of selected bacteria.
