Guyot training, 4500 vines per hectare, average vine age 25 years.
Vinification
Production involves heating the must from 0C to 18C, adding selected yeasts and conducting fermentation at a controlled temperature of 18 to 20C in autoclaves. When the wine must reaches 3 to 3.5 degrees of alcohol, alcoholic fermentation is stopped by refrigeration to minus 3C. This is followed by sterilizing microfiltration before isobaric bottling.
