Fermentation is started with selected yeasts and takes place at about 18C in temperature-controlled stainless steel tanks. After alcoholic fermentation there is a brief period on fine lees with light stirring. Bottling takes place the spring after harvest. Aged in bottle for 2 to 4 months.
